โซเดียมไบคาร์บอเนต, Sodium Bicarbonate, NaHCO3

โซเดียมไบคาร์บอเนต หรือ โซเดียมไฮโดรเจนคาร์บอเนต (Sodium bicarbonate or sodium hydrogen carbonate) เป็นสารประกอบที่มีสูตรทางเคมีNaHCO3 ผงฟูมีลักษณะเป็นของแข็งสีขาว มีโครงสร้างเป็นผลึก แต่ปรากฎในรูปผงละเอียด มีคุณสมบัติเป็นเบส ผงฟูมีชื่อทางการค้าที่เรียกกันทั่วไปหลายชื่อด้วยกัน เช่น เบรกิ้งโซดา(baking sda) เบรดโซดา(bread soda) คุ๊กกิงโซดา (cooking soda) และ ไบคาร์บอเนตโซดา (bicarbonate of soda)

กระบวนการผลิต (production)

NaHCO3 เตรียมได้จากกระบวนการโซลเวย์ (Solvay process) โดยใช้มีปฏิกิริยาที่เกี่ยวข้องดังนี้

1. ใช้ก๊าซคาร์บอนไดออกไซด์ ทำปฏิกิริยากับโซดาไฟ ได้ผลิตภัณฑ์เป็น โซเดียมคาร์บอเนตและน้ำ

CO2 + 2 NaOH  Na2CO3 + H2O

2. จากนั้นเติมคาร์บอนไดออกไซด์ให้ไปทำปฏิกิริยากับ โซเดียมคาร์บอเนต ก็จะได้โซเดียมไฮโดรเจนคาร์บอเนต หรือผงฟูตกตะกอนลงมาเมื่อมีความเข้มข้นมากเพียงพอ

Na2CO3 + CO2 + H2O  2 NaHCO3

การสลายตัวเมื่อได้รับความร้อน (Thermal decomposition)

เมื่อผงฟูได้รับความร้อนมากกว่า 70 °C จะค่อยๆ สลายตัวไปเป็น โซเดียมคาร์บอเนต (Na2CO3) น้ำ และคาร์บอนไดออกไซด์ (CO2) ปฏิกิริยาการสลายตัวนี้จะเกิดขึ้นได้เร็วที่อุณหภูมิ 250 °C

2 NaHCO3  Na2CO3 + H2O + CO2

หากเผาโซเดียมคาร์บอเนตต่อที่อุณหภูมิ1000 °C ก็จะได้ผลิตภัณฑ์เป็นโซเดียมออกไซด์ และคาร์บอนไดออกไซด์

การนำไปใช้งาน (Applications)

ที่พบได้ทั่วไปคือ ใช้ในการทำอาหาร ทำเบเกอรี่ ซึ่งผงฟูนี้จะ ใช้เป็นแหล่งให้ก๊าซคาร์บอนไดออกไซด์ โดยการสลายตัว ในขั้นตอนการอบเบเกอรี่ ทำให้เกิดช่องว่างขึ้นภายใน ทั้งนี้สามารถผสมผงฟูเป็นส่วนประกอบของเบเกอรี่ชนิดต่างๆ และสามารถทิ้งส่วนผสมนี้ไว้โดยที่ไม่เกิดก๊าซ CO2 ก่อนขั้นตอนการอบได้ นอกจากนั้นยังใช้ปรับสภาพสระว่ายน้ำ หรือตู้ปลาให้มีความเป็นกลาง เนื่องจากการเติมคลอรีนที่มากเกินไปทำให้สระว่ายน้ำมีความเป็นกรดมากเกินไป

โซเดียมไบคาร์บอเนต หรือรู้จักกันทั่วไปในชื่อ เบกกิ้งโซดา (baking soda)

นอกจากใช้ทำขนมแล้ว ยังมีประโยชน์ต่องานบ้านอื่น ๆ อีกมากมาย ดังนี้

1. ล้างสารพิษออกจากผักและผลไม้

     นำเบกกิ้งโซดา 1 ช้อนโต๊ะ ผสมกับน้ำ 2 ลิตร (เพิ่มสัดส่วนตามความเหมาะสม) แช่ผักผลไม้ล้างสารพิษได้ 90% สะอาดพอ ๆ กับการใช้ด่างทับทิม

2. น้ำยาดับกลิ่นปาก

     ผสมเบกกิ้งโซดา 1 ช้อนโต๊ะ กับน้ำอุ่น 1 แก้ว ใช้บ้วนปากจะช่วยระงับกลิ่นปากได้

3. น้ำยาซักผ้า

     ใส่เบกกิ้งโซดา 1/2 ถ้วย ในเครื่องซักผ้าพร้อมกับน้ำยาซักผ้า จะทำให้ผ้าขาวและสีสดขึ้น

4. สครับขัดผิวหน้า

     นำเบกกิ้งโซดา 2 ชต. น้ำผึ้ง 1 ชต. นมสด 2 ชต. ผสมรวมกัน นำมาขัดหน้าเบา ๆ แล้วล้างด้วยน้ำเย็น หน้าจะใส  (ควรทำสัปดาห์ละ 1-2ครั้ง)

5. ดับกลิ่นอับในตู้เย็น

     เทใส่ถ้วยเล็ก ๆ ทิ้งไว้ด้านในสุดของตู้เย็น แล้วคอยเปลี่ยนทุก 3 เดือน

6. ทำความสะอาดเขียง

     ผสมเบกกิ้งโซดากับน้ำ  นำมาล้างเขียง จะช่วยให้เขียงหมดกลิ่นคาว

7. กำจัดคราบสกปรกบนพื้นผิวต่าง ๆ

     สำหรับพื้นแข็ง ๆ เช่น พื้นครัว พื้นห้องน้ำ อ่างล้างหน้า อ่างอาบน้ำ ให้ละลายเบกกิ้งโซดา 4 ช้อนโต๊ะ ผสมกับน้ำอุ่น 4 ถ้วย เช็ดทำความสะอาด แล้วค่อยล้างออก ถ้าเป็นคราบสกปรกทำความสะอาดยาก ให้ผสมเบกกิ้งโซดากับน้ำอุ่นในปริมาณเท่ากันจนข้นเป็นแป้ง แล้วพอกทิ้งไว้บริเวณนั้นสัก 1 ชั่วโมงแล้วค่อยเช็ดออก

8. ทำเครื่องดื่มเกลือแร่

     นำเกลือ 1 ช้อนโต๊ะ น้ำตาล 5 ช้อนชา เบกกิ้งโซดา 1 ช้อนชา ผสมในน้ำดื่ม 1 ลิตร คนจนละลายหมด นำไปแช่ตู้เย็นไว้ดื่ม

9. ทำความสะอาดไมโครเวฟ

     นำเบกกิ้งโซดา 4 ช้อนโต๊ะ ผสมกับน้ำอุ่น 1 ลิตร นำผ้ามาชุบแล้วเช็ดทำความสะอาดภายใน  คราบสกปรกจะออกง่าย

โซเดียมไบคาร์บอเนต (อังกฤษ:Sodium bicarbonate) (NaHCO3), หรือโซเดียมไฮโดรเจนคาร์บอเนตรู้จักทั่วไปในชื่อ เบคกิ้งโซดา และ ไบคาร์บอเนตออฟโซดามีลักษณะเป็นผลึกสีขาวที่ละลายน้ำ ได้ดีมีความเป็นด่างเล็กน้อย

• บรรเทาอาการผิวไหม้แดด

ผสมเบคกิ้งโซดาลงในน้ำอุ่นสำหรับอาบ จะช่วยบรรเทาอาการ

ปวดแสบปวดร้อนที่เกิดจากผิวไหม้แดดได้

• แก้เจ็บคอ

ผสมเบคกิ้งโซดาครึ่งช้อนชาลงในน้ำเปล่า ใช้กลั้วคอทุกๆ 4 ชั่วโมง จะช่วยลดอาการเจ็บคออันเกิดจากกรด รวมทั้งยังช่วยรักษาแผลในช่องปากได้อีกด้วย...

• น้ำยาดับกลิ่นปาก

สูตร 1 ผสมเบคกิ้งโซดา 1/2 ช้อนโต๊ะ ในน้ำ 1 แก้ว ดับกลิ่นหอมกลิ่นกระเทียมได้ ถ้าใช้เบคกิ้งโซดา 1 ช้อนโต๊ะผสมน้ำ 1แก้ว และผสมเกลือ 1 ช้อนโต๊ะใช้เป็นน้ำยาบ้วนปากได้

สูตร 2 ผสมเบกกิ้งโซดา 1 ช้อนโต๊ะกับน้ำอุ่น 1 ถ้วย ใช้บ้วนปากจะช่วยระงับกลิ่นปากได้

• ขัดฟันให้ขาว

นำเบคกิ้งโซดา 1 ช้อนชาผสมน้ำมะนาว 1/2 ช้อนชา ใช้แปรงสีฟันจุ่มแล้วขัดฟันเบาๆ บ้วนน้ำเปล่าจนสะอาด คราบชากาแฟจะหายไป (ห้ามทำเวลาป่วย เพราะมะนาวใกรดสูงอาจทำลายเคลือบฟันได้)

• ทำสครับขัดหน้าได้ดี

สูตร 1 เอาเบคกิ้งโซดา 3 ส่วน น้ำเปล่า 1 ส่วน ผสมกันให้ได้เปียกๆแล้วขัดหน้าเบาๆหน้าจะสะอาดดีค่ะ

สูตร 2 เอาเบคกิ้งโซดา 2 ชต. ข้าวโอ๊ต 1 ชต. น้ำผึ้ง 1ชต. น้ำสด 2 ชต. ผสมรวมกันนำมาขัดเบาเบา แล้วล้างด้วยน้ำเปล่าเย็นเย็น หน้าใสค่ะ

• ใช้ทำสครับขัดผิว

เบคกิ้งโซดาครึ่งถ้วย เกลือครึ่งถ้วย มะนาว 1 ลูก น้ำมันทาผิว 2 ช้อนโต๊ะ เอาผสมกันก่อนจะใช้แล้วก็เอามาขัดผิวระหว่างอาบน้ำค่ ะ

• สปาเท้า

เบคกิ้งโซดา 1/2 ถ้วย เกลือทะเล 2 ช้อนโต๊ะ น้ำมันหอมระเหยกลิ่นมินต์ และน้ำอุ่นใส่ในกะละมังแช่เท้า แช่แล้วสบายเท้าดี จะช่วยฆ่าเชื้อโรค ดับกลิ่นเท้า รวมทั้งความร้อนจะช่วยผ่อนคลายกล้ามเนื้อเท้าได้อีกด้วย

• น้ำยาล้างสารพิษจากผักและผลไม้

นำเบคกิ้งโซดา 1/2 ช้อนโต๊ะผสมกับน้ำ 10 ลิตร แช่ผักผลไม้ 15 นาที แล้วล้างออกด้วยน้ำเปล่า 2 ครั้ง สามารถลดสารพิษได้ 90%

• น้ำยาล้างคราบในกาน้ำชาที่เป็นโลหะ

ใส่น้ำลงในกาน้ำชาแล้วเติมเบคกิ้งโซดาลงไป2 ช้อนโต๊ะ บีบน้ำมะนาวลงไปครึ่งลูก ต้มราวๆ 15 นาที ขัดและล้างจะสะอาดง่าย

• ครีมลบรอยขูดขีดเครื่องครัว

ละลายเบคกิ้งโซดา 4 ช้อนโต๊ะผสมกับน้ำ 1 ลิตร ทำความสะอาดเครื่องครััวที่ทำด้วยฟอร์ไมก้า สเตนเลส พลาสติก โครเมี่ยม (ยกเว้นอะลูมิเนียม) ริ้วรอยจะเลือนหายไป

• น้ำยาทำความสะอาดเตาไมโครเวฟ

นำเบคกิ้งโซดา 4 ช้อนโต๊ะผสมกับน้ำอุ่น 1 ลิตร นำผ้ามาชุบแล้วเช็ดทำความสะอาดภายใน คราบสกปรกจะเช็ดออกง่าย

• หมักหมูนุ่ม

ใส่นิดเดียวค่ะ หมักหมูก็จะนุ่ม ถ้าใส่มากเกินจะมีกลิ่นสารเคมี

• ทำความสะอาดผักผลไม้

ผสมเบคกิ้งโซดา 1 ช้อนโต๊ะกับน้ำอุ่น 4 ถ้วย ใช้ล้างผักผลไม้ โดยแช่ไว้สักครู่ (รอให้ส่วนผสมเย็นก่อน) แล้วค่อยล้างออกด้วยน้ำธรรมดาอีกครั้ง จะช่วยให้ผักผลไม้สะอาดน่ากินมากขึ้น

• ดับไฟในกะทะ

ในกรณีที่มีน้ำมันกระเด็นติดไฟนิดๆขณะทำอาหาร หรือว่าไฟติดในกะทะ อย่าเทน้ำลงไป เพราะว่าการเทน้ำลงไปบนน้ำมันที่ร้อนๆอยู่จะทำให้ไฟล ุกมากขึ้นเนื่องจากน้ำมันกระจาย ให้ใช้เบคกิ้งโซดาค่ะ แห้งๆนั่นแหละ เทลงไปตรงๆเบกกิ้งโซดาพอโดนความร้อนมันจะปล่อยคาร์บอ นไดออกไซด์ออกมาช่วยทำให้ไฟลดน้อยลงได้ค่ะ

• เค้กกล้วยหอมจะให้ฟูนุ่มน่ากิน

ก็ต้องมีเบคกิ้งโซดาเป็นส่วนผสม

• ดับกลิ่นอับในตู้เย็น

เบคกิ้งโซดาจะดูดกลิ่นอับในตู้เย็น หากคุณนำไปใช้ดูดกลิ่นในตู้เย็น ให้เปิดฝากล่องด้านบนออกให้หมด หรือเทใส่ถ้วย ทิ้งไว้ด้านในสุดของตู้แล้คอยเปลี่ยนทุก 3 เดือน

 • ขจัดคราบไขมันที่ติดรอบท่ออ่างล้างจาน

ซึ่งถ้าปล่อยไว้นานๆ จะเป็นเหตุให้ท่ออุดตันได้ มีวิธีทำคือ นำเกลือแกงใส่ลงไปในท่อ 2-3 ช้อน จากนั้นนำเบคกิ้งโซดา ไปต้มกับน้ำให้ เดือดแล้วเทลงไปไขมันที่อุดตัน ก็จะหลุดออกไปหมด

• ปัญหาเรื่องท่ออุดตันด้วยคราบไขมันในอ่างล้าง

ให้โรยเกลือรอบๆ ขอบท่อ จากนั้นนำน้ำยาเบคกิ้งโซดา 10 ช้อนโต๊ะผสมน้ำร้อนๆ 1 ขวดลิตร ค่อยๆ เทลงไป เกลือและน้ำยาจะช่วยให้คราบไขมันหลุดออกง่ายขึ้น และทำซ้ำอีก 2-3 รอบ ตามด้วยน้ำเปล่าปิดท้าย หากคราบยังไม่ยอมออกก็คงต้องพึ่งช่างแล้วค่ะ

• ทำความสะอาดเขียง

ผสมเบคกิ้งโซดากับน้ำทำความสะอาดเขียง จะช่วยทำให้เขียงหมดกลิ่นคาว

• น้ำยาทำความสะอาดเครื่องสุขภัณฑ์

เทเบคกิ้งโซดา 1/2 กล่องลงในถังนำหลังชักโครก ทิ้งไว้ 1 คืนแล้วค่อยกดชักโครก

• ถังและชักโครกสะอาดและปราศจากกลิ่น

ยาดับกลิ่นท่อและแก้ท่อตัน เทเบคกิ้งโซดาลงไปในท่อ 1ถ้วยก่อนแล้วใส่เกลือแกงลงไป 1/4 ถ้วย ตามด้วยน้ำร้อน ท่อจะไม่ตันและกลิ่นสะอาดอีกด้วย

• น้ำยาดับกลิ่นพรม

ผสมเบคกิ้งโซดา 1/2 ถ้วยกับแป้งข้าวโพด 1/2 ถ้วย หยดน้ำมันหอมระเหยกลิ่นโปรดลงไป 15 หยด ใส่ขวดสเปรย์ฉีดบนพื้นพรมก่อนนอนทิ้งไว้จนเช้า กลิ่นพรมจะสะอาดสดชื่น

• น้ำยาซักผ้าขาวสะอาด

สูตร 1. ใส่ผงเบคกิ้งโซดา 1/2 ถ้วนในเครื่องซักผ้าพร้อมกับน้ำยาซักผ้า จะทำให้ผ้าขาวและสีจะสดขึ้น

สูตร 2. ใช้ตอนซักผ้า ใส่เบคกิ้งโซดา 1/2 ถ้วยลงในน้ำสุดท้ายที่กำลังจะล้างฟองออกจะทำให้ผ้ากลิ่นสะอาดขึ้นค่ะ

• ดับกลิ่นอับของเสื้อผ้าที่เราสวมใส่

เมื่อจะใช้ให้ผสมเบกกิ้งโซดาครึ่งถ้วย (1 ถ้วย = 16 ช้อนโต๊ะ) กับผงซักฟอกชนิดน้ำปริมาณที่คุณใช้ แทนที่คุณจะใช้สารฟอกขาวชนิดคลอไรด์ถึงถ้วยหนึ่งเต็ม ๆ คุณสามารถใช้เพียงครึ่งหนึ่งเข้าไปแทนที่ได้ แต่ก็อย่าลืมว่าถึงเบกกิ้งโซดาจะใช้ซักเสื้อผ้าได้ แต่มันก็ไม่ได้มีประสิทธิภาพในการซักเท่ากับผงซักฟอก เบคกิ้งโซดาจึงเป็นเพียงส่วนเสริมให้ผ้าสะอาดมากขึ้น เท่านั้น

• ใช้ล้างแปรงและหวี

เอาเบคกิ้งโซดา 1 ช้อนชา ผสมน้ำอุ่นในชามอ่างเล็กๆ แช่หวีกับแปรงไว้ค่ะ มันจะทำให้พวกคราบต่างๆหลุดออกได้ง่าย

• ทำความสะอาดที่ดัดฟัน (retainers)

2 ช้อนชากับน้ำอุ่น 1 ถ้วย แช่ไว้สักพักแล้วเอาแปรงขัดๆปัดๆคราบออก

• ดับกลิ่นแมว

ให้เอาเบคกิ้งโซดาเทลงไปใน litter box ของแมว ก่อนที่จะใส่ litterหลังจากนั้น ทุกครั้งที่คุณทำความสะอาด litter box พอตักอึแมวไปแล้วก็เอาเบกกิ้งโซดาโรยนิดๆด้านบนเพื่อ เป็นการกลบกลิ่นค่ะ

• พื้นผิวสิ้นคราบสกปรก

สำหรับพื้นผิวแข็งๆ เช่น พื้นครัว พื้นห้องน้ำ อ่างล้างหน้า อ่างอาบน้ำ ให้ละลายเบคกิ้งโซดา 4 ช้อนโต๊ะผสมกับน้ำอุ่น 4 ถ้วย เช็ดทำความสะอาด แล้วค่อยล้างออก ในกรณีที่มีคราบสกปรกทำความสะอาดยาก ให้ผสมเบกกิ้งโวดากับน้ำอุ่นในปริมาณที่เท่ากันข้นจน เป็นแป้ง จากนั้นให้พอกทิ้งไว้บริเวณที่มีคราบสกปรก อย่างเช่น บนเคาน์เตอร์ หรือจานกระเบื้องสัก 1 ชั่วโมงแล้วค่อยเช็ดออก

• เช็ดเตารีด

ใช้ผ้าชุบน้ำผสมเบคกิ้งโซดาบิดพอหมาด นำไปเช็ดใต้เตารีด หรือเครื่องครัว ที่ทำด้วยฟอร์เมก้า สแตนเลส โครเมี่ยม จะทำความสะอาดได้หมดจดไม่เกิดรอยขูดขีด

• ดับกลิ่นพรม

โรยเบคกิ้งโซดาให้ทั่ว ปล่อยทิ้งไว้15 นาที แล้วดูดออก

• สำหรับพรมที่เปื้อนคราบน้ำมัน

ให้เทน้ำผสมเบคกิ้งโซดาลงตรงบริเวณที่เปื้อนคราบน้ำม ัน ปล่อยทิ้งไว้ประมาณ 12 ชั่วโมง คราบก็จะจางลง จากนั้นให้ใช้น้ำผสมเบกกิ้งโซดาเช็ดทำความสะอาดซ้ำอี กครั้ง

• กลิ่นรองเท้า

ปัญหาใหญ่ของใครหลายคนเพราะรองเท้าถูกใช้งานทั้งวัน เก็บหมักหมมเหงื่อไคล

ความอับชื้นง่ายมาก วิธีก็คือ โรยเบคกิ้งโซดาในรองเท้า แล้วนำรองเท้าคู่นั้นใส่ถุงพลาสติกรัดให้แน่น นำไปแช่ช่องแช่แข็งของตู้เย็นไว้ 1 หรือ 2 คืน นำรองเท้าออกมาทิ้งไว้ในอุณหภูมิห้อง แล้วเอาไปสลัดผงเบคกิ้งโซดาออกให้หมดแล้วสวมได้เลย แต่หากเรายังไม่สวมทันทีให้ปล่อยผงเบคกิ้งโซดาไว้อย่ างนั้นก่อนจนกว่าจะนำมาสวม หรือใช้กระดาษหนังสือพิมพ์อัดเป็นก้อนมาใส่ด้านในรอง เท้า หมึกของกระดาษหนังสือพิมพ์จะช่วยดูดกลิ่น และยังทำให้รองเท้าอยู่ทรงด้วย ทุกครั้งที่กลับบ้านให้ใส่กระดาษหนังสือพิมพ์ทุกครั้ ง และเปลี่ยนแผ่นใหม่ทุกอาทิตย์

• กลิ่นในรถ หากมีกลิ่นบุหรี่ในรถ

ให้โรยเบคกิ้งโซดาลงที่ก้นที่เขี่ยบุหรี่ในรถเพราะเบคกิ้งโซดาจะช่วยดับกลิ่น แต่ต้องไม่ลืมนำมันออกมาทำความสะอาดด้วยการเทเถ้าทิ้ งแล้วโรยผงเบคกิ้งโซดาไว้ที่ถาดเสมอ ๆ

• บรรเทาอาการลมพิษได้เช่นกัน

วิธีคือ ใช้ผงเบคกิ้งโซดาผสมกับน้ำ 2-3 หยดพอให้เป็นแป้งเปียก ทาบริเวณผื่นเพื่อลดการระคายเคืองและแก้คัน

• ฮ่องกงฟุต

อาการคันตามง่ามเท้าเพราะติดเชื้อราหรือที่เราเรียกว ่า ฮ่องกงฟุต อาจเกิดขึ้นได้กับทุกคน ยารักษาเชื้อราในบ้านบางทีคุณอาจมียารักษาเชื้อราอยู ่แล้วคือ เบคกิ้งโซดา สามารถลดอาการคันและแสบร้อนตามง่ามนิ้วเท้า ใช้เบคกิ้งโซดา 1 ช้อนโต๊ะผสมน้ำพอให้เหนียวๆ แล้วนำมาทาที่เท้า จากนั้นล้างเท้าและเช็ดให้แห้ง ปิดท้ายด้วยการทาแป้งข้าวโพดบริเวณที่คัน ยาตำรับต่อไปนี้แม้ว่าจะฟังดูแปลกสักหน่อย แต่ล้วนได้รับคำรับรองจากผู้ที่ทดลองใช้มาแล้วว่าได้ ผลชะงัด ได้แก่ แอลกอฮอล์เช็ดแผล น้ำส้มไซเดอร์หรือน้ำส้มสายชูหมักจากแอปเปิล (apple cider vinegar) ผงกระเทียม สเปรย์ใส่ผม และน้ำผึ้ง ให้คุณเลือกใช้อย่างใดอย่างหนึ่ง ทาวันละ 3-4 ครั้ง

Sodium bicarbonate or sodium hydrogen carbonate is the chemical compound with the formula NaHCO3. Sodium bicarbonate is a white solid that is crystalline but often appears as a fine powder. It has a slightly salty, alkaline taste resembling that of washing soda (sodium carbonate). The natural mineral form is nahcolite. It is a component of the mineral natron and is found dissolved in many mineral springs. It is among the food additives encoded by European Union, identified by the initials E 500. Since it has long been known and is widely used, the salt has many related names such as baking soda, bread soda, cooking soda, and bicarbonate of soda. In colloquial usage, its name is shortened to sodium bicarb, bicarb soda, or simply bicarb. The word saleratus, from Latin sal æratus meaning aerated salt, was widely used in the 19th century for both sodium bicarbonate and potassium bicarbonate. The term has now fallen out of common usage. Nahco3 is the formula for Sodium bicarbonate a white crystalline solid which appears as a fine powder. It is mainly used as an anti pollutant, as a cleaning agent, for baking purposes, for indigestion and in the manufacture of textile and leather products.

Applications

Sodium bicarbonate is used in a process for removing paint and corrosion called sodablasting; the process is particularly suitable for cleaning aluminium panels which can be distorted by other types of abrasive. It can be administered to pools, spas, and garden ponds to raise pH levels. It has weak disinfectant properties, and it may be an effective fungicide against some organisms. Because baking soda will absorb musty smells, it has become a reliable method for used-book sellers when making books less malodorous.

Fire extinguisher

Sodium bicarbonate can be used to extinguish small grease or electrical fires by being thrown over the fire.  However, it should not be applied to fires in deep fryers, as it may cause the grease to splatter.[15] Sodium bicarbonate is used in BC dry chemical fire extinguishers as an alternative to the more corrosive ammonium phosphate in ABC extinguishers. The alkali nature of sodium bicarbonate makes it the only dry chemical agent, besides Purple-K, that was used in large-scale fire suppression systems installed in commercial kitchens. Because it can act as an alkali, the agent has a mild saponification effect on hot grease, which forms a smothering soapy foam. Dry chemicals have since fallen out of favor for kitchen fires, as they have no cooling effect compared to the extremely effective wet chemical agents specifically designed for such hazards.[citation needed

Cooking

Sodium bicarbonate, referred to as "baking soda" is primarily used in cooking (baking), as a leavening agent. It reacts with acidic components in batters, releasing carbon dioxide, which causes expansion of the batter and forms the characteristic texture and grain in pancakes, cakes, quick breads, soda bread, and other baked and fried foods. Acidic compounds that induce this reaction include phosphates, cream of tartar, lemon juice, yogurt, buttermilk, cocoa, vinegar, etc. Sodium bicarbonate can be substituted for baking powder provided sufficient acid reagent is also added to the recipe. Many forms of baking powder contain sodium bicarbonate combined with calcium acid phosphate, sodium aluminum sulphate or cream of tartar.

Sodium bicarbonate was sometimes used in cooking vegetables, to make them softer, although this has gone out of fashion, as most people now prefer firmer vegetables. However, it is still used in Asian and Latin American cuisine to tenderise meats. Baking soda may react with acids in food, including Vitamin C (L-ascorbic acid). It is also used in breadings such as for fried foods to enhance crispness.

Heat causes sodium bicarbonate to act as a raising agent by releasing carbon dioxide when used in baking. The carbon dioxide production starts at temperatures above 80 °C. Since the reaction does not occur at room temperature, mixtures (cake batter, etc.) can be allowed to stand without rising until they are heated in the oven.

Neutralization of acids and bases

Many laboratories keep a bottle of sodium bicarbonate powder within easy reach, because sodium bicarbonate is amphoteric, reacting with acids and bases. Furthermore, as it is relatively innocuous in most situations, there is no harm in using excess sodium bicarbonate. Also, sodium bicarbonate powder may be used to smother a small fire, as heating of sodium bicarbonate releases carbon dioxide.

A wide variety of applications follows from its neutralization properties, including reducing the spread of white phosphorus from incendiary bullets inside an afflicted soldier's wounds.[medical citation needed

Medical uses

Sodium bicarbonate mixed with water can be used as an antacid to treat acid indigestion and heartburn. It is used as the medicinal ingredient in gripe water for infants.

Intravenous sodium bicarbonate is an aqueous solution that is sometimes used for cases of acidosis, or when there are insufficient sodium or bicarbonate ions in the blood. In cases of respiratory acidosis, the infused bicarbonate ion drives the carbonic acid/bicarbonate buffer of plasma to the left and, thus, raises the pH. It is for this reason that sodium bicarbonate is used in medically supervised cardiopulmonary resuscitation. Infusion of bicarbonate is indicated only when the blood pH is markedly (<7.1–7.0) low.

Oral sodium bicarbonate has been shown to slow progression to end stage renal disease in individuals with stage 4 chronic kidney disease and metabolic acidosis (plasma sodium bicarbonate levels 16-20meq/L). 

It is used as well for treatment of hyperkalemia. Since sodium bicarbonate can cause alkalosis, it is sometimes used to treat aspirin overdoses. Aspirin requires an acidic environment for proper absorption, and the basic environment diminishes aspirin absorption in the case of an overdose. Sodium bicarbonate has also been used in the treatment of tricyclic antidepressant overdose.  It can also be applied topically as a paste, with three parts baking soda to one part water, to relieve some kinds of insect bites and stings (as well as accompanying swelling).

Adverse reactions to the administration of sodium bicarbonate can include metabolic alkalosis, edema due to sodium overload, congestive heart failure, hyperosmolar syndrome, hypervolemic hypernatremia, and hypertension due to increased sodium. In patients consuming a high-calcium or dairy-rich diet, calcium supplements, or calcium-containing antacids such as calcium carbonate (e.g., Tums), the use of sodium bicarbonate can cause milk-alkali syndrome, which can result in metastatic calcification, kidney stones, and kidney failure.

Sodium bicarbonate can be used to treat an allergic reaction to plants such as poison -ivy -oak or -sumac to relieve some of the associated itching.

Bicarbonate of soda can also be useful in removing splinters from the skin.

Some alternative practitioners have promoted baking soda as a cancer cure, which the American Cancer Society has warned against due to both its unproven effectiveness and potential danger in use.

Personal hygiene

Toothpaste containing sodium bicarbonate has in several studies shown to have a better whitening and plaque removal effect than toothpastes without it.

Sodium bicarbonate is also used as an ingredient in some mouthwashes. It has anti-caries and abrasive properties. It works as a mechanical cleanser on the teeth and gums, neutralizes the production of acid in the mouth and also acts as an antiseptic to help prevent infections.[citation needed

Sodium bicarbonate in combination with other ingredients can be used to make a dry or wet deodorant. It may also be used as a shampoo.

Sodium bicarbonate may be used as a buffering agent, combined with table salt, when creating a solution for nasal irrigation.

In sports

Small amounts of sodium bicarbonate have been shown to be useful as a supplement for athletes in speed-based events, like middle distance running, lasting from about one to seven minutes. However, overdose is a serious risk because sodium bicarbonate is slightly toxic;] gastrointestinal irritation is of particular concern.  Additionally, this practice causes a significant increase in dietary sodium.

As a cleaning agent

A paste from baking soda can be very effective when used in cleaning and scrubbing.  For cleaning aluminium objects, the use of sodium bicarbonate is discouraged as it attacks the thin unreactive protective oxide layer of this otherwise very reactive metal. A solution in warm water will remove the tarnish from silver when the silver is in contact with a piece of aluminium foil. A paste of sodium bicarbonate and water is useful in removing surface rust as the rust forms a water soluble compound when in a concentrated alkaline solution. Cold water should be used as hot water solutions can corrode steel.

Baking soda is commonly added to washing machines as a replacement for softener and to remove odors from clothes. Sodium bicarbonate is also effective in removing heavy tea and coffee stains from cups when diluted with warm water.

During the Manhattan Project to develop the atomic bomb in the early 1940s, many scientists investigated the toxic properties of uranium. They found that uranium oxides stick very well to cotton cloth, but did not wash out with soap or laundry detergent. The uranium would wash out with a 2% solution of sodium bicarbonate (baking soda). Clothing can become contaminated with depleted uranium (DU) dust and normal laundering will not remove it. Those at risk of DU dust exposure should have their clothing washed with baking soda (about 6 ounces (170g) of baking soda in 2 gallons (7.5l) of water).

As a biopesticide

Sodium bicarbonate can be an effective way of controlling fungus growth, and in the United States is registered by the Environmental Protection Agency as a biopesticide.

Cattle feed supplement

Sodium bicarbonate is sold as a cattle feed supplement, in particular as a buffering agent for the rumen.

Sodium bicarbonate, as 'bicarbonate of soda', was a frequent source of punch lines for Groucho Marx in Marx brothers movies. In Duck Soup, Marx plays the leader of a nation at war. In one scene, he receives a message from the battlefield that his general is reporting a gas attack, and Groucho tells his aide, "Tell him to take a teaspoonful of bicarbonate of soda and a half a glass of water."[51] In A Night at the Opera, Groucho's character addresses the opening night crowd at an opera by saying of the lead tenor, "Signor Lassparri comes from a very famous family. His mother was a well-known bass singer. His father was the first man to stuff spaghetti with bicarbonate of soda, thus causing and curing indigestion at the same time.”
